In our region, traditional rosés—popularly known as clarets—have historically been made with blends of Viura (generally the majority) and red grapes, almost always Garnacha.
Our challenge was to create a claret without using white grape varieties, leaving the spotlight on the red Garnacha. We sought to offer a wine that combines breadth, minerality, acidity, mellowness, and unmistakable freshness.
It is no small challenge.
Red Garnacha intended for rosés requires a different ripening process than that intended for reds: it must be harvested early, which from a red perspective would be interpreted as an unripe Garnacha. The key is to apply "white viticulture" to a red variety, redefining the concept of ripening. This scenario demands extreme care to prevent oxidation of the must.
Based on our experience, this wine is not aged in wood. After fermentation, it rests on its fine lees for several months in concrete tanks, thus preserving its purity and expressiveness.
